Jeruk Mangga Step by Step


Mango is  a must buy fruit for my house. We bought all sorts of mangoes. So happened that my MIL gave us some raw mango. What do we do with it? Kebetulan baru belajar resipi buat jeruk paling mudah dari my SIL. Haruslah dipraktikkan sebelum terlupa. Resipi ni sangat mudah dan yang paling penting boleh terus makan tanpa perlu untuk diperam. Jom start..

1. Dimulakan dengan mengupas beberapa biji mangga muda..




2. Kemudian dihiris nipis... ketebalan terpulang pada citarasa masing-masing



3. Dan inilah hasil hirisan...


4. Akhir sekali masukkan gula, garam, cili padi hiris dan asam boi merah. Gaulkan rata...




5. Dan hasilnya...krap krup..krap krup... rangup dan cukup rasa. yang paling penting tiada bahan pengawet dan pewarna tiruan...oppps ada sikit dari asam boi...

Black Pepper Crab


 Black Pepper Crab


Apart from chilli crab or salted egg crab, you can try the black pepper crab for a change... the dish is simple but so delicious...hmm just love the aroma of ginger...





 Ingredients 

Fresh Crabs, cut into halves
Garlic
Curry leaves
A bit of chilli padi
Ginger (sliced)
Oyster Sauce
Black Pepper Sauce
Salt and Pepper
Cooking oil 
Spill of love

 Methods

Steamed the crab and put aside (this is to avoid excessive juice from the raw crab)
Heat oil in a pan
Saute garlic, ginger , curry leaves and  chilli padi
Then pour black pepper sauce and oyster sauce
Add salt and coarse pepper
and finally add the steamed crab

That's it..

Serve with plain white rice...

I have always craving for the authentic British (brei~t~ish) Fish and Chips since I left London fifteen years ago... it's like your staple ... fat chips with Salt and vinegar... argghhhh.... most Malaysian have their Fish batter with breadcrumbs... owh no!! i seriously don't like them.... and most of them has a very strong fishy taste if not properly prepared.... and they didn't serve it with Mushy peas....there are so many don't s .....ngheee

So? what other option do I have? answer to that would be... to do it myself.... and this is how my Fish and Chips look like... ah ha....




Ingredients

For the fish

Skinless dory fillet
Multi purpose flour
Corn flour
1 tsp baking powder
Ice-cold sparkling water
Salt and pepper
Oil for frying

For the mushy peas

Canned peas (boil for 2 minutes)
Butter
Salt and Pepper

Side Dish
Chips
Mayonnaise
Lemon (Cut into wedges)
Green salad (optional) 
I used watercress and cherry tomato with drizzle of olive oil and lemon

I do not intend to provide method in this post.... basically what you need to do is to prepare the batter like how you make your banana fritter batter, then dip the fish and fry them until golden crisp. Prepare the mushy peas like how you make your mashed potato and serve them as a platter... that' it.

Baked Cheesy Crab in Tomato and Herbs Sauce


This is the dishes that I have imagining for so long..... one fine day, felt that it's time to materialise what I have imagined.... I marry the Chinese taste with the authentic Italian flavour.... got the inspiration from a Singapore restaurant Eighteen Chefs... Click here ... we drove all the way to Singapore for this Chilli crab and it's halal...

and this is my version of Chilli crab... serve this with Mantao bread ....




Ingredients

5 fresh crabs (cut halves)
Garlic (chopped)
Ginger (thinly sliced)
Chilli padi
Tomato and Mushroom pasta sauce
Chilli flakes
Mixed Italian herbs
Mozzareella and cheddar cheese (grated)
Salt and pepper to taste
Oil
Sprinkle of love

Method

Preheat oven at 200-220 degree C
Heat the oil in the frying pan
      Saute garlic and ginger until golden brown
Add chilli padi
Pour in pasta sauce
Add salt, pepper and mixed Italian herbs to taste
Add crab (let the crab fully cooked)
Once done, put the crab in baking tin or pyrex
Topped with cheese
and bake in the oven for 10-15 minutes at 180 degree C

Side dish

Mantao bread
(you can get this from any hypermarket selling at frozen food section)

Grilled Salmon with Herbs

This is our simple dinner recipe which is easy to prepare.. no thinking required... scrumptiously delicious..




all you need...

Ingredients

Slice of fresh salmon 
Butter
Dill
Mixed spicy herbs
Lemon and mashed potato for garnish
A drop of love


Method

Grill salmon on a pan (strictly no oil)
sprinkle spicy mixed herbs, salt and pepper - put aside
Mix butter & chopped dill (Refrigerate it)

Serve grilled salmon and put the butter on it (melted without asking)... 
serve with lemon slices and mashed potato..

That's all
 
This recipe is so easy, which I realised that I have nothing much to write on how to prepare this... a two liner recipe explained all... try this and no regret is assured...

Blueberry muffins


Thinking of what to bake yesterday after work..... actually,  I am so tempted to make blueberry muffins since monday.... all the ingredients required I have it at home except for the fresh blueberries.... Have been looking for this at nearby supermarket but none of them have it on shelf.... Until I cannot stand anymore, walk through the fruit wholesaler behind my office and got it..... yes I'm baking a muffin.. so what's the big deal....there isn't a big deal at all...except that it's my first time baking muffin... I must thank my mum who lent her kitchen aid mixer...making baking easier that I thought how it should be...

Got the recipe from Simply Scratch....

Blueberry Muffins

Ingredients
1/2 butter (125 gm) unsalted
1 cup sugar
2 eggs
1tsp salt
1 1/4 tsp vanilla essence
2 cups multipurpose flour
2 tsp baking powder
1/2 cup fresh milk
1 cup blueberry



 Methods

Beat butter and sugar 
Add egg, one at a time
Add vanilla essence, salt and baking powder
Add 1 cup of flour
Then pour in milk
Add the remaining flour
and lastly add the blueberries which has been powdered with 1 tbs of flour.
Put the mixture into the paper cups...
Sprinkle brown sugar on top (optional)

Bake 15-17 minutes at 160 degree
Makes : 20 cups

Cooking Class at Dapur Magika Kak Lin

It was never cross my thoughts having cooking class in my house... what more if the class is leaded by myself.... it was all started from friends personal requests to have a hands on cooking experience in my house....  they prefer to try preparing foods on their own for food they ate during their visit to my house occasionally....sometime its their kids who requested for the same dish over and over again....so mummy has no choice except to learn and repeatedly do this again and again....

For whatever reasons.... I take this as a challenge.... I am more than happy to guide through step by step cooking... it was an informal session.. they agreed to buy all the ingredients and I'll share with them the techniques.... I have once referred them to my blog for recipe... but to them that is very theoretical..... they prefer to have a practical hands on so that they can pick up the tricks and tips along the way......better way of learning too....

For this session , the first ever livecast from Dapur Magika Kak Lin....we'll be preparing two all time favourite dishes

1. Lasagne

&

2. Mini Chicken Pie

I have two friends on board.... Fieza and K Sally.... thanks to both of you for the trust.. I felt honoured and thanks to Icah for accompanying us for morale support....

I let the two ladies to take charge and lead their show from the beginning till then end of the session. 

Step 1 : Preparing Ragu and Bechamel Sauce for Lasagna


 



Step 2 : Layering the Lasagne sheets with the sauce



 


Step 3 : While baking the lasagne, prepare the filling for mini pie...




Step 4 : Mould the pastry roll and place them on the baking tray





Step 5 : Happy faces after successfully baked the lasagne and mini pie

Halal Wantan


My daughter has a special request for her friends coming over for raya... she wants me to prepare steamboat.... quite easy to get the ingredients from local supermarket... but I didn't normally buy the wantan... reason being... the Halal status that I'm concerned.. 

What option do I have then? answer for this is to make my own wantan....

First.. you need to prepare  the filling... it can be anything you desire...... I like to add some vegetables for the crunchiness ..... you may add chinese cabbage , canned button mushrooms.... etc





Ingredients

Prawn
Chicken
Dried Shitake Mushroom
Water Chestnut
Carrot
Capsicum
Garlic
Salt and pepper
Spring Onion
and a must have ingredient... 
Sesame oil
and don't forget
a pinch of love





Methods
Chopped all the ingredients and mixed well. Wrap in a wantan sheet....



 
 excuse for the upside down photo.... try rotating but still the same... very irritating...

I just bought the ready made wantan which cost less than RM2.00 for 100 sheets...Wantan sheets is made of flour, water and egg....

There are many ways to wrap the wantan... but I opt for the simplest version because this is what doable by my little tiny hands who assisted me... Put about 1 tsp of filling in the centre of the sheet.... then..




fold the sheet and meet the two edges together to form a triangle.... Add a water to make it sticky






Repeat the steps..... and that's it... keep it frozen or you may fry it first..... very very easy

Ayam Ingkung

Salam hujung  Ramadhan semua..... pagi ni longlai je untuk melangkah ke ofis... mungkin dah mood raya... tapi apakan daya.. demi mencari rezeki, ai kuatkan semangat untuk bertugas...... sekarang dah waktu lunch... masa untuk menyiapkan post yang dirangka malam tadi....

So topik kali ni tetap berkisarkan resipi dan resipi pilihan hati Ms Dot kali ni ialah Ayam Ingkung

What???? Ayam Ingkung?? apa tu... mungkin bagi sesetengah u all memang tak pernah jumpa resipi ayam macam

ni...ai pun tak pasti asal usul ayam ingkung ni... tapi kebiasaannya kalau ada special occassion contoh macam dapat masuk U , dapat kerja baru, naik pangkat dsb.... yang diraikan tu kenalah belanja seisi keluarga makan ayam ingkung ni....

Ayam ni biasanya dimasak seekor seekor .... ai tak de apa special ocassion pun, kebetulan MIL datang berbuka di rumah, so ambik kesempatan untuk menuntut resipi dari dia... hands on , terus - terus praktikal, teori2 tak main la.....mana real... mudah-mudahan, dengan rasa ikhlas hati untuk belajar, ilmu ni kekal dalam ingatan dan dapat dimanfaatkan untuk generasi akan datang.....


Jom kita tengok apa bahan-bahan yang diperlukan.....




Ayam Ingkung

Ingredients

2 whole chicken
Shallots
Garlic
Ginger
Lemongrass
Coconut Milk
Curry Powder
Salt and a bit of sugar to taste
drop of love
 
Methods

Sliced shallots, garlic, ginger and lemongrass.
Mixed curry powder with water and sliced ingredients
Stuffed chickens with mixture
Tie chicken 
Cook chicken with a bit of water until soft
Add coconut milk, salt and sugar to taste






 

Tips
Untuk rasa lebih enak, tumiskan asing bahan-bahan hiris dan serbuk kari (tmuis darat). Masukkan ke dalam masakan apabila ayam dah empuk...

Ayam ni memang best makan ramai-ramai.... cara makan dia kata orang jawa cuil je dengan tangan.... barulah ada kemesraan ikatan kekeluargaan..... sedapnya sampai ke tulang.... lagi best kalau di masak dengan ayam kampung.... barulah kaw namanya.

Salted Egg Prawn


What could be the best dish for prawn? or how you like the prawn to be cooked? Nowadays, most affordable and available  prawn in market is the breed species from shrimp farming.... after a while , somehow I felt sick of eating them...

Solution for that? hmm every time ai balik kampung, mesti singgah kat Pasar Sungai Besar... kat sana sampai rambang mata tak tentu arah nak pilih udang... banyak sangat udang laut, segala macam saiz ada... harga very reasonable... bayangkan.. biasa ai beli udang belaan ni pun dah RM29 sekilo yang kononnya size XXL... tapi kalau kat sana dengan size yang sama, ai boleh dapat udang laut dengan harga RM30 sekilo.... cumanya kat Sungai Besar memang tak ada can nak pilih... peniaga biasanya main kaut je..alasan diorang.."semua segar la amoi... apa lagi mau pilih"...yang nyatanya diorang tak nak kita pilih yang besar-besar je.....

Pasar Sungai Besar ni kadang-kadang can be beyond your expectation... hari tu ai ada nampak sepasang lobster... harga RM70 sekilo...geram je nak beli... tapi tak tahu nak siang and masak apa..kalaulah ada restaurant yang boleh masakkan untuk kita memang ai beli..... tak pe .. lepas ni buat research cara nak masak lobster....mungkin seumur hidup ai , baru 2-3 kali makan lobster.... yang paling best masa my friend belanja ai kat Mr. Lobsterman.... memang best... nak tau kat mana Mr. Lobsterman ni.. Kalau dah beli udang laut ni, biasa ai selaku chef DMKL akan refer kat enche hubby sebelum masak... benda susah dapat la kata..nanti kalau salah resipi or tak kena selera rugi bahan mentah... tak dapat menikmati rasa udang sebenar......lebih baik dapatkan mutual agreement dari big boss.... so dapat consent boss untuk masak resipi yang ai propose...

So untuk kali ni ai propose untuk masak Salted Egg Prawn... hmm tapi tak berapa nak jadi sebab tumis pakai minyak instead of butter... so tak berapa nak lemak....


 



Resipi ni boleh dimasak dengan ketam... and bahan dia sangat mudah

Ingredients

1/2 kg Prawn
Oil for frying
Butter
Garlic chopped
Evaporated milk
Salted egg (yolk)
Curry leaves
Chilli Padi
Salt and sugar
A pinch of love

Methods

Pre fry the prawn (set aside)
Melt butter
Add garlic, curry leaves and chilli padi until it turned yellowish
Add salted egg and milk (I blend these two together)
Add sugar and salt
and finallay
Add prawn



Rasanya jangan cakapla..memang sedap.... ai suka rasa berpasir telur masin tu...... manis, pedas, masin lemak.... makan pulak dengan nasi panas and baby kailan masak garlic.... terangkat di buatnya..

Kalau nak tahu rasanya... cubalah sendiri.... hasil air tangan sendiri tentu lebih baik....

Exotic Salad...

One thing I love about going back to enche hubby's hometown is to go to the fish market... we will surely make a point to do marketing every time we went back to Sungai Besar.... it's cheap and fresh... I love those makcik selling all sorts of ulam.... 

These are some of the ingredients I bought last weekend.... if you are looking for cili padi yang memang hot.... which you hardly found in Shah Alam.... here's the place... I always have this issue of "rambang mata" when buying chillies over there...so end up buying from few shops... the quality of hotness is superb... meaning you just need a few shots to bring you the flaming hot flavour to your dish....

Other stuffs I bought, young galangal, lemongrass, pineapple, petai, daun kesum, ginger etc..





When I have all these ingredients in hand.... my recipe thinking process will automatically enhanced..... and I love cooking when ingredients are fresh and available... the chopping, squeezing ahhhh... is very satisfying.......

This time, I'm preparing a more exotic salad......Chicken F_ _ t Salad ... I have once shared this recipe but no harm sharing it again just in case someone missed it......

 Ingredients

Chicken F_ _t 
Glass noodles
Lemongrass
Tomatoes
Chilli Padi
Shallots
Lime Juice
Salt , Sugar &  Pepper
Fish Sauce

and don't forget the magic spell
A drop of love


 



 Methods

 Boiled chicken feet until soft. De bone it (Put aside)
Soak the glass noodle in warm water until soft (Put aside)
Slice/dice all other ingredients (Tomato, lemongrass, chilli padi, shallots)
Toss everything in a mixing bowl
Add fish sauce, salt, sugar & pepper
Squeeze the lime
Add the chopped coriander leaves
and finally
drop the spell (Mom's love) to the dish..

very easy ... I just love the texture of chicken F_ _ t... crunchy, chewy and hmmmmm... best of all... the bite of chilli padi, onion and coriander leaves and the soury zest of lime ...make this dish taste to perfection... try this... or you can get this from most of Thailand Restaurant....

Chocolate Chip Cookies


Chocolate chip cookies is an evergreen cookies not just for festive season but it's all year round. It has been my dream to bake my own cookies with proper oven.... alhamdulillah, I made it... and I made it my way.. a very sinful version of Choc Chip.. don't try if you're not ready for a blast of chocolate indulgence and the nutty crunch.... But the bad thing of having this jars of cookies available in your home means that I need to increase my effort to do more workout and  get the calories intake burned in an equal amount....and my pimples are everywhere on my face because of the nuts last warning... stop scrolling if you're not ready for this cookies monster.....

Chocolate Chip Cookies

Ingredients
1 butter
3/4 cup sugar 
2 eggs
2 cups of flour
2 1/2 cups of oats (blend)
1 tsp vanilla essence
1 cup of mixed nut
1/2 bar of grated Cadbury chocolate
1 cup of Chocolate Chips

Method
Beat butter and sugar (Don't over do it)
Put egg and vanilla essence
Add flour and oats
Add the rest of ingredients as below.
I used pecan & almond for the nuts...
(next time,I may use macademia and buttersctoch as a combo).. how about it





Mixed well and place the dough in the refrigerator for 1 hour before baking... don't forget to use cling wrap to preserve the moisture...



 
 

Make a small ugly rocky shape as shown below...






within 10 minutes... dough is ready to be baked


 


Bake for 15 minutes at 170 degree celcius

 



Let it cool before putting it in a jar



 

Use a baking sheet ...

Soto Ayam Istimewa



Despite battling going through heavy traffic jam everyday to reach home from work for Iftar, I will still make a point to prepare something for the family from my kitchen.... alhamdullillah so far, never thought of buying the main dish from Pasar Ramadhan... reason being, my 6 years old daughter is fasting, and my 5 years old boy is also learning to fast.. feeding their empty stomach with outside food can be very risky .... 


Might as well just prepare something simple .... like this..... if I can refer to as simple...

SOTO




Ingrdients

For the Soup
Water
Chicken
Sup Bunjut
Ginger Juice
White Pepper
Salt
Dried Shallots
Dried Garlic

Fried Chicken
Chicken (Quartered)
Grated ginger
Garlic
Tumeric powder
Salt
Oil for frying


Pegedel

Potato (Fried)
Dried Shallot
Salt
White Pepper
Egg

Mashed it and form a small round ball shape....then flatten it....*Tips, the potato must be fried until golden brown and immediately put in the stone mortar to mash it until smooth in order to form the shape easily. Deep in an egg and shallow fry until golden brown.

Nasi Impit or Lontong
Su'un (goreng)
Chinese Parsley
Beansprout (Celur)
Fried Shallot and Garlic
Sambal kicap

*Tips on frying soto ingredients...
Use the same oil to fry everything in this chronology

First : Shallots and Garlic
2nd : Su'un
3rd : Potato
4th : Chicken
5th : Spare aside for pegedel

Why in that manner.... ha... minyak tu dah wangi dengan gorengan bawang.... terus meresap ke kentang dan ayam..... kalau pakai minyak fresh goreng ayam... dapatlah ayam goreng yang rasanya flat....


*Tips on Fried shallots (Bawang Goreng)


If you notice, fried shallots & garlic is widely used in this recipe.... even the soup used the bawang goreng instead of just onion..... I am very particular in choosing fried shallot... most of the one selling added flour to the onion... even scarier I heard they added straws to get the crisp...my goodness..

To make this bawang goreng, you have to use only this one particular type of shallots and it is most expensive ... Thai shallots.... the price now is about RM15-16 per kg... easily found in pasar malam but not the one in big hypermarket...... this onion will gives you the crisp when frying...

 



and the only place where I can buy this is in Indonesia... Surabaya or Bandung... they eat bawang goreng as a snack.....very healthy snack

happily "meratah" the bawang goreng... I have to hide my bawang goreng.... so every time I make my bawang goreng before dish... I doubled the quantity so that I can eat half of it while cooking..... very nice... try it....

what I am trying to share with you guys , you don't need a complicated ingredient to prepare for a dish.... all you need is the secret technique of using simple ingredient which you can easily found in your local store....that's why I'm giving you lots of tips...




Ok back to my soto..... Here we are..... imagine if I have to buy all these from Bazar Ramadhan?.... just a portion for 9 of us.... can't afford to bring my kids to dine out... once in a while maybe.....so what I ate in the restaurant, I'll try to cook it at home... cook , failure, improvise, cook, success.... the cycle repeated....
